Rava Ladoo | Rava Laddu Without Milk | Sooji Ka Ladoo


Rava laddoo/Sooji Ka Ladoo/Semolina Balls - A quick and easy sweet prepared during festivals, especially Diwali.  Traditionally, this laddu is prepared using rava, sugar and ghee.  The proportion of rava and sugar might differ from home to home.  Some prepare it with milk and coconut too, but this will reduce the shelf life of this sweet.

Am giving here the traditional recipe - the one without milk and coconut.

Ingredients:

  • Rava/semolina - 1 cup
  • Sugar - 1 cup
  • Cashew nuts - 25 gm
  • Raisins - 25 gm
  • Cardamom powder - 1/4 tsp
  • Ghee - 1/2 cup

How To Prepare Rava Laddu or Sooji Ka Ladoo:

  • Heat 2 tsp of ghee and roast rava over low flame till the rava turns light brown in color and gives out a nice aroma.
  • Grind sugar to a fine powder.
  • Mix well rava, sugar and cardamom powder.
  • Heat 1 tsp of ghee and fry cashew nuts and raisins separately and add to rava and sugar mix.
  • Heat the remaining ghee to smoking point and switch off.  Add it to the rava and sugar mix little by little and mix well.  (Do not pour the entire ghee, add only as much as required).
  • When the mixture cools down to bearable warmth, take small amount of it onto your palm and shape it like a ball.  (If you are not able to roll it into shape properly or the mixture is a bit dry, add some more ghee and mix well and try again).
  • Leave the laddus on a tray for about 30 minutes to set properly.  Then put them in an airtight container.
  • These laddus will remain good for about15-20 days since there's no milk or coconut in it.

Notes:

  • Keep the flame low while roasting the rava to avoid the rava getting over roasted.
  • Add only as much ghee as required to help you shape the mixture into balls.
  • The ghee should be warm and added gradually to the rava mixture and not at one go.
  • Adjust sugar according to your preference.
