How To Make Aloo Tamatar Sabzi:

  • Heat oil in a kadai and add the cumin seeds.  Once they start to crackle, add the urad and channa dals and let them fry till they turn golden brown.
  • Add onions and fry till they turn translucent.  Then add the ginger-garlic paste and mix well and let it cook for about 2 mins.
  • Now add the potatoes and let them cook till they turn light brown.   Add the tomatoes, turmeric, chilli powder and salt and mix all well together and let the curry cook on medium flame for about 8-10 mins.  Keep stirring in between so that the veggies don't stick to the bottom of the kadai.
  • Check if the potatoes are cooked and add garam masala powder and mix well.  Also check for salt and add if required.  Garnish with coriander leaves and remove from fire.
  • Serve the tasty Aloo Tamatar curry with rotis, naan, parathas or even rice.
